Ingredients (6-8 people)
1kg zucchini
250gr fresh goat (semi-fresh) (Malicorne)
½ bouquet fresh mint
2 tbsp fine semolina (Panzani semolina of fine durum wheat)
100gr flour 55
100gr butter
100gr Parmesan
1 tbsp olive oil
Salt, pepper
nutmeg
Directions
Preheat oven to 180°C
Grate the zucchinis with their skin finely (medium grater 4mn)
Pour them with fine salt (1 tbsp) for 1 hour in a sieve strainer
Spin the zucchinis
Mix the zucchinis with the semolina (absorbs water), chopped mint, the goat cheese cut in dices
Add pepper and nutmeg
Put the preparation in an oiled dish
Prepare the crumble dough
Mix the flour with butter and parmesan, crumble the 2 ingredients well, add the nutmeg
Spread the crumble dough over the zucchinis
Bake in the oven for 25mn
